Chocolate Chip Buckwheat Cookie


Delicious Gluten Free, Lunch Box Friendly and Cuppa of tea companion.

125g Butter room temp

1/3 cup coconut sugar

1 Tsp vanilla

1 Free range Egg

2 Cups Buckwheat Flour

1 Tsp baking powder

2 Tbsp. Cacao

1 Tsp cinnamon

Pinch Sea salt

3/4 cup finely chopped dates

50g 70% dark chocolate finely chopped

Preheat oven to 180 Degrees.

Cream sugar, butter & vanilla together.

Add remaining ingredients and mix until all combined.

Roll into small balls and gently press down onto cooking tray.

Bake for 15 minutes. Allow to cool on tray.
